I was curious if there is a way to modify the FDE to cause an AI aircraft to lengthen its takeoff ground roll?

decrease flaps area and/or engine thrust. Be careful, though - you might get nasty side effects.

Which scalar needs to be adjusted in regards to engine thrust? Aircraft models of interest would be Dee's AI F-27 and CV-580.

You can change the reverse thrust (min_throttle_limit line) - make it more negative for a shorter landing. The other choice would be to increase the toe brake scalar. One is for slowing in the early part of the landing run, the other for the late part.
The other things you can change to lengthen the takeoff roll is to lower the wing area, or increase the flaps up stall speed.
